Super-Simple Spiced Carrot Cookies
These are very delicious! They are kind of a mix between gooey butter and pfefferneusse. Try it out with different cake mixes to get your own favorite flavors.
My favorite is using carrot cake!
Ingredients:
one package cream cheese, 8 ounces
1/2 cup butter, softened
1 egg
1/4 teaspoon vanilla extract
1 package carrot cake mix, 18.25 ounce
1/2 cup confectioners’ sugar
Directions:
Preheat oven to 350 degrees F (175 C).
In a medium bowl, cream the cream cheese and butter together. Mix in the egg and vanilla. Add cake mix and stir until well blended. Roll into 1 inch balls and roll the balls in the confectioners’ sugar. Place 1 inch apart on an ungreased cookie sheet.
Bake for 10 to 13 minutes. Cookies should still be soft. If you leave them in the oven until they look “done,” you left them in too long and they will be burnt on the bottom. Let cool one to two minutes, then remove cookies from tray. Roll in confectioner’s sugar once again while warm and then cool on wire cooling racks.
Once cool, store in an airtight container to maintain freshness and softness.
